When there’s any sort of chill in the air, I long for a warm bowl of soup. This Hearty Baked Potato Soup Recipe is my favorite because it’s hearty and better than all my other comfort foods. I’ll hide the leftovers in the back of the fridge so everyone else forgets about it. I know that goes against everything I say about sharing and struggling and being more Christlike, but once you taste the Baked Potato Soup, you’ll understand.

 

Baked Potato Soup

Ingredients:

4 Large Russet Potatoes
1 cup butter
1 cup flour
6 cups milk
salt and pepper to taste
1 package of Bacon (approximately 12 slices)
2 cups shredded cheddar cheese
5 green onions, chopped
8oz carton of sour cream

  1.  Bake 4 potatoes on center rack of oven at 400 degrees for 1 hour.
  2.  Cut the potatoes in half lengthwise.  These are piping hot so use a pot holder and protect your hands.
  3. Using a spoon scrape the potatoes into a bowl creating chunks for your soup.  Be mindful of what size chunks you want.  (It is okay to let the potatoes cool slightly, but you do want to do this step before they cool to quickly or they will not break up as easily.)Hearty Baked Potato Soup
  4.  Fry the bacon until crispy. (Tip: Cut each slice in half for more evenly cooked bacon) Set Aside to cool
  5. Make a rue.. melt one cup of butter in a large pot, then slowly add the cup of flour until smooth.IMG_8619
  6. Adding about one cup at a time, slowly pour in the six cups of milk over medium heat.  Stir with a whisk almost constantly until very thick.
  7. Add the potato, salt and pepper, half the shredded cheddar cheese, half the bacon, half the green onions.  Do not boil!
  8. Finally add the entire 8oz carton of sour cream then reduce your heat to low, or turn off completely.  Do not boil!IMG_8625

All done!  Wait!  What do we do with the rest of the bacon, green onions, and cheese?  Garnish you bowls to reflect your desired taste!

This recipe is always a major hit at our fall and winter parties.  It’s also a big hit on a random Tuesday night for dinner.  It’s very easy to do, a little messy at first, but once you’ve made the recipe a few times you’ll discover the flow is remarkably relaxed.
